Yellow polka dot cake / Mango fudge cake/ Vegan cake

   Hi everyone :)  This special cake,  is one I made for hubby's birthday.  I wanted this cake to be very special, and designed them visually,  therefore,  this has also given me many sleepless nights with regards to flavour, essence and ingredients.  Since, mango was favourite with him and kid, I went by this yellow polka dot cake :)


I prepared this  mango cake with Tang - mango powder. They were easily available in the nearest super-market.  Also, I wanted this cake to be eggless - hence made an vegan cake which was fudgy as well.  But, this fudgy mango cake, was very well compromised with vegan whipped cream. I have prepared mango cream, using the tropolite cream for polka dots.   You can also have the plain cake as tea-time snack, if you wish to have them without cream.   So, all thanks to Tang, mango powder - they infused such an amazing mango flavour.



Every slice of this cake, quite easily melted in mouth.  All thanks to the turn-table and palette knife I got recently, they made the frosting part easier and quite professional.  I will also, recommend you guys to buy the same for an neat finish.  





I have decorated the polka dots with silver balls.  This cake was an huge hit.  My vegetarian inlaw's had an extra slice, after knowing that this cake was all vegan.  When refrigerated, this cake is best consumed within an week. 

 Mango vegan cake


For making mango vegan cake, you will be needing following ingredients
  • 11/4 cup all purpose flour
  • 3/4 cup granulated sugar (which is later blended once to get coarse powder)
  • 1 tsp Baking powder
  • Pinch of baking soda
  • 1/2 cup milk
  • 1/4 cup oil
  • 1 tsp mango essence
  • 1/3 cup Tang mango powder
  • 2/3 cup water
  • Two pinches of yellow food colour
The following ingredients will need an 6-inch cake pan and temperature of about 180 degree celsius for fourty minutes

Pre-heat the oven at 180 degree celsius

Make sure all ingredients are under room temperature

Grease your cake pan and line them with butter paper.

Mix APF, baking powder and soda.  Sieve them thrice, keep aside.  To this mixture, add coarsely powdered sugar. This is our dry ingredients.

Dissolve tang powder in 2/3 cup water, keep aside.  Mix this along with milk, oil, essence. This is our wet ingredients.


Now slowly and steadily mix dry ingredients into wet ingredients.  Do so in two to three batches.  Do not over-mix.


After mixing, add food colour and pour them over cake pan.  Introduce this to oven.


Bake for about fourty minutes, till an wet stick inserted in middle comes out clean.  Please note that timing  may vary from oven to oven.


Keep this aside for an minute, and unmould them over wire rack.  Let them cool completely.

Vegan whipped cream frosting


Please go through this link for vegan cream frosting, using Tropolite.  Whip up 1 cup of tropolite liquid cream and that will yield  required amount of 3 cups of whipped cream.

Reserve 3/4 cup of cream.  To this, add 1/4 cup of Tang mango powder and an pinch of yellow colour to get this mango cream.


Keep 21/4 cup of whipped cream and this above-said mango cream refrigerated.  

Assembly


This is the most important phase, as it depicts the outcome, as whole.  Try to assemble in cold place, If you stay at hot place, try  prior refrigeration of  all materials that go into assembly, like cake, palette knife, frosting etc.

First slice cooled cake, horizontally into two parts.  For this, you might even refrigerate the cake, so that they toughen up and help with cutting part.  

Place the first slice over an turn table. Using palette knife, drop an dollop of cream, and spread them evenly, as rotating the turn table.  This ensures uniform frosting all over the cake.  



Make it smoothly, and now place another slice over the frosting.


Again place an dollop of cream and spread them thoroughly in sides and front, as you rotate.  



DONE.


Pipe your mango cream, like tiny dots all over the surface and sides of the cake.








I, just added silver balls, to each dots. 


Yayyyyyy.... our vegan cake is ready now ;P
